These sweet potato & corn fritters are the perfect, funky lunchbox addition. They tick all the boxes:

  • Easy to make

  • Freezable

  • Delicious!

  • Can be enjoyed a variety of different ways (by themselves, with guacamole, sour cream, with salad etc.)

We even have these for dinner some nights with with a poached egg or some grilled halloumi and salad - delicious!

FUNKY FRITTERS

Makes approx. 10 fritters

Ingredients:

1 1/2 cups sweet potato, grated

250g corn kernels

2 spring onions

2 eggs

1/2 cup plain flour

1/2 tsp baking powder

1 tsp garlic powder

salt & pepper

oil for cooking

Method:

  1. Prepare your ingredients: grate your sweet potato, drain the corn kernels, finely slice the spring onions.

  2. In a medium-sized bowl, combine all ingredients (except for the cooking oil) and a generous pinch of salt & pepper. Use your hands to mix everything together.

  3. Heat a large non-stick fry-pan over medium heat. Add 1 tbsp of oil.

  4. Measure 1 heaped tbsp of batter and pour it into the pan. Repeat until you have 3-4 fritters cooking at once (or as many as you can fit, making sure to leave room around them to flip!).

  5. Cook for 3 minutes before flipping and cooking on the other side. By the time you remove the fritters from the heat both sides should be golden brown. If the pan is getting too hot at any point, reduce the heat a little.

  6. Repeat with the remaining batter.

  7. Serve with avocado, bacon, eggs, fresh greens (spinach & rocket), yoghurt or sour cream,

    aioli, salsa etc. or place in a reusable zip-loc bag and freeze for lunchboxes!
