Sunday Morning Pancakes
Ingredients
2 x bananas
1 cup self-raising flour
1 cup milk of choice
1 egg
Butter (to grease the pan with)
To Serve (optional):
Maple syrup
Butter & honey
Lemon juice & sugar (my personal fave)
Berries & yoghurt
Golden syrup
Directions
In a large bowl, mash the bananas together well.
Crack the egg into the banana, pour in the milk and lightly beat until evenly combined.
Sift the flour into the wet mixture. Using a fork, whisk together all ingredients well. You want to make sure there are no lumps of flour (there may be some lumps of banana - that's ok!)
Heat a non-stick fry pan over low-medium heat, grease with some butter.
Use 1/4 cup to scoop pancake batter into the warm pan. Cook for about 1 minute 30 seconds (1:30) before flipping. Repeat with remaining batter, greasing the pan with some butter each time.
Serve hot with your choice of accompaniments.
