ORANGE & MANGO JELLIES

Makes approx. 26 gummies

Ingredients:

  • 2 tbsp gelatine powder

  • 60mls (1/4 cup) water

  • 120g mango flesh (frozen is fine - I usually leave them to thaw for 15 minutes first)

  • 250mls (1 cup) fresh orange juice (approx 2 large oranges)

  • silicone moulds

Method:

  1. Combine the gelatine powder and water in a small bowl. Set aside to ‘bloom’.

  2. In a blender, combine the mango flesh and fresh orange juice. Blend until smooth.

  3. Add the blended mango and orange and bloomed gelatine (it will be solid by now) to a small saucepan. Heat on low, stirring, until the gelatine has dissolved.

  4. Remove from the heat and carefully pour into your silicone moulds.

  5. Place the moulds in the fridge to set for a minimum of 2 hours.

  6. Once set, carefully remove the jellies from their moulds. Store in an air-tight container in the fridge and enjoy!

NOTES:

I place my silicone moulds on a baking tray as this makes it easier to transfer to the fridge.

If you don’t have access to silicone moulds, you can use a small baking tin lined with baking paper and create one large jelly. Once set, you can remove the jelly from the baking paper and cut up into small pieces.
