Nut Free Nibble Bars
1 cup rolled oats
1/2 cup desiccated coconut
1/2 cup pepitas
1/2 cup sunflower seeds
1/4 cup sesame seeds
1/2 cup sultanas
1/2 cup dried apricots
1 tsp ground cinnamon
125g unsalted butter
1/2 cup honey
NOTES: SUPER delicious! But didn’t hold together… try packing them down even more… bake and then freeze/refrigerate??? Try 180 degrees for 20 minutes??? Reduce honey amount from 2/3 cup to 1/2 cup.
Pre-heat the oven to 160 degrees celsius. Line a rectangular cake pan with baking paper.
Use a food processor to finely chop the dried apricots (otherwise, you can do this by hand).
In a large bowl, combine the oats, coconut, all the seeds, sultanas, apricots and cinnamon. Mix well.
In a small saucepan over low heat, melt the butter and honey together. Stir often.
Pour the melted butter & honey mixture into the muesli and mix well so that everything is evenly coated.
Pour the muesli mixture into the tray and use the back of a spoon to spread out so that it’s even. Use the spoon to press the mixture down so that it’s firm and level.
Place in the pre-heated oven and bake for 20-25 minutes. When you remove it from the oven it will still be very soft, you’ll know it’s cooked when it’s golden around the edges. As it cools, it will harden.
Remove from the oven. Leave to cool in the tray for 5 minutes before carefully removing (use the edges of the baking pan to gently lift the slice from the tin) and place it on a cooling rack to cool before slicing.
Once cooled, slice into whatever size you like - mine are approximately
