Mrs Claus’ Rocky Road
Rocky road has always been a favourite in my family. This recipe is really simple, quick and super duper delicious! The beauty of it is that you really can add in whatever you like. Some people like to chop up and throw in Turkish delight, and others like to include red jelly snakes. My favourite fillings are marshmallows, peanuts and scotch finger biscuits. What are your favourites?
Ingredients
6 scotch finger biscuits (this should make about 1 cup crushed biscuits)
1 cup marshmallows
1/2 cup roasted peanuts
1/2 cup shredded coconut + 1 tbsp extra for sprinkling
360g milk chocolate
360g dark chocolate
Method
Crumble the biscuits into small pieces. You can do this, carefully, using a knife, or your hands, or even bang the cookies lightly using a bottle or mallet.
Chop the marshmallows into small pieces (alternatively, you can use mini marshmallows).
Roughly chop the peanuts.
In a large bowl, combine all ingredients except the chocolate.
Break the chocolate into pieces and add to a microwave-proof bowl. Place in the microwave for 30 seconds, then remove and stir well. Repeat in 20 second bursts, making sure to give the chocolate a really good stir in between, until melted.
Once the chocolate has melted, pour it into the bowl with all of the other goodies. Stir really well to combine.
Line a baking tray with some baking paper (I use a 27cmx18xm for this but anything similar will do). Pour the rocky road mixture into the tray and use a spatula to evenly spread.
Sprinkle with some extra shredded coconut and place in the fridge to set for 1-2 hours.
Cut up and enjoy!!
TIPS: When melting the chocolate, be sure to melt it in short bursts in the microwave and stir it really well in between. In fact, there might still be some lumps of chocolate when you remove it from the microwave for the last time. This is ok! Give it a good stir and they should melt. Being too aggressive and impatient with the melting of the chocolate can burn it and give it a grainy texture - trust me… you don’t want this!!
