Lamb & Rosemary Saussy Rolls
Honestly, who doesn’t LOVE a sausage roll? To be fair, I’m talking about homemade sausage rolls. There is no greater enjoyment! These sausage rolls hero one of the all time great combinations: lamb, rosemary & garlic. Make them and see for yourself!
Makes 9 sausage rolls
Ingredients:
500g lamb mince
1/2 brown onion
4 cloves garlic
1/4 cup rosemary leaves
1 tbsp olive oil
1 tsp paprika
Salt & pepper
3 sheets puff pastry
1 egg
Sesame seeds to sprinkle on top
Method:
Preheat the oven to 200˚C. Line a baking tray with baking paper. Remove the puff pastry sheets from the freezer to thaw.
Finely chop the onion, garlic and rosemary leaves.
In a medium sized bowl, combine the lamb mince, onion, garlic, rosemary, olive oil, paprika, salt and pepper. Use your hands to mix the ingredients well.
Place a thawed sheet of puff pastry in front of you. Heap 1/3 of the mince mixture onto the edge closest to you (about 2cm in from the edge). Use your fingers to evenly spread the mince along.
Roll the edge closest to you of the puff pastry over the top of the mince mixture. Continue to roll until you’ve reached the opposite edge of the pastry. Use a serrated knife to gently slice your sausage roll into smaller sizes (I like to slice these ones into thirds). Place rolls on the lined baking tray.
Repeat with the remaining mixture and sheets of pastry.
Gently whisk an egg in a small bowl. Use a pastry brush to brush the top and sides of each sausage roll with the whisked egg. Sprinkle with sesame seeds.
Place in the oven to cook for 40 minutes, or until golden and crispy.
Enjoy!
These are DELICIOUS served with a tomato relish. Otherwise, feel free to serve with your favourite sauce.
