Heart-Warming Apple Crumble

Ingredients

Filling:

600g Granny Smith apples (about 4 medium sized apples)

1 tbsp lemon juice

1 tsp cinnamon

1/4 tsp allspice

1.5 tbsp caster sugar

2tbsp flour

Crumble:

1.5 cups oats 

1 cup plain flour

1 tsp baking powder

1/4 cup caster sugar
150g unsalted butter

1.5 tsp cinnamon

Method

  1. Preheat the oven to 180˚C (conventional).

  2. Lightly grease the bottom and sides of a 24cm (diameter) pie dish with some butter - this will prevent the crumble from sticking.

  3. Prepare your filling: core the apples and cut them into small cubes (about 1cm each). In a medium saucepan, combine the chopped apple, lemon juice, cinnamon, allspice and sugar.

  4. Place the saucepan on the stove over high heat. Stir and cook for 10 minutes or so - this will help to soften the apples slightly.

  5. In a second bowl, combine the oats, flour, baking powder, sugar and cinnamon.

  6. Melt the butter - you can do this in a small saucepan over low heat or in 10-15 second bursts in the microwave (make sure you stir it in between bursts so you don’t burn the butter).

  7. Pour the melted butter into the oat mixture and stir well to combine.

  8. Spoon the apple mixture into the bottom of the pyrex dish and spread out evenly. Spoon the crumble mix over the top and spread out evenly.

  9. Place in the oven and bake for 20-25 minutes or until the crumble is golden.

  10. Enjoy!

NOTES: In my household, we enjoy a crunchy, warm bowl of apple crumble with a nice big dollop of vanilla bean ice cream. You could also enjoy your apple crumble with some cream. Otherwise, by itself is just as delicious and comforting.
