French Toast
Celebrate mum this Mother’s Day by whipping up some French Toast to serve to her in bed. I promise you this French Toast is DELICIOUS! In fact, while you’re at it, it might be wise to whip up some for yourself as well ;)
Serves 2
4 slices brioche bread
1 egg
1/2 cup milk
1/4 tsp cinnamon
1/4 tsp mixed spice
1 tsp vanilla
To serve: maple syrup, butter, honey, berries, caster sugar, extra cinnamon
In a shallow bowl, crack the egg and whisk gently to break up. Add the milk, cinnamon, mixed spice and vanilla and stir to combine.
Place one slice of brioche face down in the milky, eggy mixture. Turn over and repeat on the other side so that both sides are coated. Remove from the mixture and repeat with the remaining brioche slices.
Heat a non-stick fry pan over medium heat. Add a knob of butter (about 1/2 tbsp) or a dash of oil to the pan.
Once the butter has melted, place the coated brioche bread to toast for about 1-2 minutes on each side (you will need to cook it in batches).
Once both sides are toasted, remove from the heat and repeat with the remaining bread.
Stack on a plate and top with your favourite things: drizzle maple syrup, fresh berries, butter and honey, sprinkle of icing sugar and/or extra cinnamon.
