Makes approx. 12 bliss balls

INGREDIENTS

1 cup dried Turkish apricots 2/3 cup desiccated coconut (+ 1/3 cup to roll the balls in later)
1 tbsp coconut oil
1 tbsp honey

DIRECTIONS

1. Add the dried apricots to the food processor and pulse until finely chopped.

2. Add 2/3 cup coconut, the coconut oil and honey to the food processor and pulse until little clumps of dough start to form.

3. Spread 1/3 cup coconut onto a plate.

4. Scoop 1 tbsp mixture into your hands and roll into a ball. Roll each ball in the coconut, coating it all over. Repeat with the remaining mixture.

5. Place in an air-tight container and refrigerate.

To store: Place in an air-tight container and store in the fridge for up to 1 week (if they last that long 😉)

Coconut & Apricot Bliss Balls

Inspired by an old favourite (apricot logs), these coconut & apricot bliss balls are DELICIOUS! Not only are they super delicious though, they take only a few short minutes to whip up and are incredibly easy - the perfect snack for beginner cooks.

I encourage you to set up the video below in front of your little ones, and get them to make these bliss balls with me. Though they may require a little help operating the food processor, the rest of the steps are self-explanatory. Let me know how you go!
