Quick Chicken Tacos

Serves 4

INGREDIENTS

For the chicken -

1 tsp smoked paprika

1 tsp ground cumin

1/2 tsp ground coriander

1/2 tsp dried oregano

Salt & pepper

500g chicken breast

1 tbsp oil

For the Lime & Sriracha
Mayo -

1/2 cup mayonnaise

1 1/2 tbsp srircha

1 tbsp lime juice

Sprinkle of salt

To Serve -

8 small tortillas

1 ripe avocado

2 ripe tomatoes

1 small red onion

1 lime

Salt

2 tbsp fresh coriander leaves

METHOD:

Prepare the Chicken:

  1. In a small bowl, combine the paprika, cumin, ground coriander, dried oregano and a sprinkle of salt and pepper.

  2. Divide the chicken into equal sized pieces and use a meat mallet (or heavy bottle) to bang it - this flattens and tenderises the meat.

  3. Rub the spice mixture evenly over all the chicken. Set aside while you prepare the mayo & ingredients to serve.

    For the Lime & Srirarcha Mayo:

  4. Combine the mayonnaise, sriracha, lime juice and a sprinkle of salt in a small bowl. Use a spoon to mix well. Taste and adjust the flavours to your liking. Set aside.

    (TIP: if you are sensitive to spice, reduce the sriracha sauce and increase the mayo).

    To prepare the serving ingredients:

  5. Peel the avocado, remove the seed and thinly slice. Set aside.

  6. Dice the tomato. Dice the onion. Cut the lime into wedges.

  7. In a medium-sized bowl, combine the diced tomato and onion, squeeze over one small wedge of lime, sprinkle with a little salt and mix well.

  8. Pick the coriander leaves and set aside.

    Cook the Chicken:

  9. Heat the oil in a large non-stick fry pan over medium heat.

  10. Add the chicken and cook for 2-3 minutes on each side, or until cooked through (it’s cooked through when the inside is opaque).

  11. Once cooked, roughly tear the chicken into smaller pieces.

    Assemble the Tacos:

  12. Just before serving, heat the tortillas in the microwave for 30 seconds.

  13. To assemble the tacos, place one tortilla in the centre of your plate. Spread some of the lime & sriracha mayo along the middle of the tortilla. Top the mayo with a few slices of avocado, some torn chicken and a generous scoop of the tomato and onion salsa. Drizzle a little more mayo on top and scatter with some fresh coriander leaves.

  14. Repeat with the remaining ingredients and enjoy!
