Quick Chicken Tacos
Serves 4
INGREDIENTS
For the chicken -
1 tsp smoked paprika
1 tsp ground cumin
1/2 tsp ground coriander
1/2 tsp dried oregano
Salt & pepper
500g chicken breast
1 tbsp oil
For the Lime & Sriracha
Mayo -
1/2 cup mayonnaise
1 1/2 tbsp srircha
1 tbsp lime juice
Sprinkle of salt
To Serve -
8 small tortillas
1 ripe avocado
2 ripe tomatoes
1 small red onion
1 lime
Salt
2 tbsp fresh coriander leaves
METHOD:
Prepare the Chicken:
In a small bowl, combine the paprika, cumin, ground coriander, dried oregano and a sprinkle of salt and pepper.
Divide the chicken into equal sized pieces and use a meat mallet (or heavy bottle) to bang it - this flattens and tenderises the meat.
Rub the spice mixture evenly over all the chicken. Set aside while you prepare the mayo & ingredients to serve.
For the Lime & Srirarcha Mayo:
Combine the mayonnaise, sriracha, lime juice and a sprinkle of salt in a small bowl. Use a spoon to mix well. Taste and adjust the flavours to your liking. Set aside.
(TIP: if you are sensitive to spice, reduce the sriracha sauce and increase the mayo).
To prepare the serving ingredients:
Peel the avocado, remove the seed and thinly slice. Set aside.
Dice the tomato. Dice the onion. Cut the lime into wedges.
In a medium-sized bowl, combine the diced tomato and onion, squeeze over one small wedge of lime, sprinkle with a little salt and mix well.
Pick the coriander leaves and set aside.
Cook the Chicken:
Heat the oil in a large non-stick fry pan over medium heat.
Add the chicken and cook for 2-3 minutes on each side, or until cooked through (it’s cooked through when the inside is opaque).
Once cooked, roughly tear the chicken into smaller pieces.
Assemble the Tacos:
Just before serving, heat the tortillas in the microwave for 30 seconds.
To assemble the tacos, place one tortilla in the centre of your plate. Spread some of the lime & sriracha mayo along the middle of the tortilla. Top the mayo with a few slices of avocado, some torn chicken and a generous scoop of the tomato and onion salsa. Drizzle a little more mayo on top and scatter with some fresh coriander leaves.
Repeat with the remaining ingredients and enjoy!
