#8 a beautiful day with some tasty bruschetta

Today has been a really beautiful day. After a very busy few weeks leading up to Christmas, followed by the Christmas and New Year period itself, I have to admit I was feeling rather weary and in serious need of some TLC. Don’t get me wrong, the past few weeks have been nothing short of perfect and the time spent eating and drinking with loved ones means more than anything. Though I do believe there is no greater sense of relief than a day (or maybe 2 or 3) to yourself to reset.

Today, I enjoyed a slow morning consisting of a sleep in, some journaling, a delicious home-made coffee, a walk with my favourite furry friend and some reading. 

It’s no secret that one of my favourite activities is cooking and preparing food… so of course days like this also involve tasty food and the opportunity to slowly potter away in the kitchen. With that being said, lunch today, no matter how slowly I prepared it, needn’t have taken more than five minutes yet brought me so much enjoyment.

After a busy weekend, I already had some sliced ‘days-old’ sourdough waiting to be devoured. I decided to toast it, and pair it with some fresh organic tomato, onion, basil and garlic. The result? Delicious!

Fresh Tomato & Basil Bruschetta: 

-       1 slice of sourdough

-       1 clove garlic, peeled

-       ½ medium sized tomato, chopped into chunks

-       ¼ red onion, diced

-       A few leaves of fresh basil, shredded 

-       Dash of olive oil

-       Either a dash of balsamic vinegar or a squeeze of lime juice (whatever you have most convenient)

-       Salt & pepper

1.     Toast the sourdough, then while still hot from the toaster, gently rub the garlic clove over one side.

2.     Combine the chopped tomato, onion and basil in a small bowl and toss with a dash of olive oil and the balsamic vinegar or lime juice. 

3.     Pile spoonfuls of the tomato mixture on top of the garlicky toast and sprinkle with a pinch of salt and pepper.
