#6 my favourite ever tomato sauce
There is something incredibly joyous about an overflowing bowl of juicy, ripe, red, organic tomatoes – they inspire me to create and eat all sorts of delicious Italian inspired feasts. While I’m certainly not a stranger to disasters in the kitchen, tomatoes somehow bring out the best in me.
Recently, I had a craving for some gnocchi. So, I “whipped” some up (whipped meaning it took me a fair chunk of my day), mixed it with this delicious sauce that I’m about to share with you, topped it with mozzarella and baked it until it was hot, golden and a little bit crispy. The following week, pizza was on my mind so I got to work making some dough just so I could top it with this tomato sauce, add some basil and some mozzarella, cook it until it was melting, golden and a little bit crispy and top it with a dash of chilli oil.
This sauce is simple and versatile and so incredibly delicious. Enjoy!
Ingredients:
⁃ 5-6 ripe tomatoes, roughly chopped
⁃ 4 cloves garlic, crushed
⁃ handful fresh oregano, roughly chopped
⁃ handful fresh thyme, roughly chopped
⁃ dash of red wine
⁃ salt and pepper to season
Method:
Heat the oil in a saucepan over medium heat. Add the crushed garlic and gently fry for 30 seconds, or until fragrant. Add the oregano and thyme leaves and coat with the oil and garlic. Add the tomatoes, gently crushing them with the top of a wooden spoon, a good dash of red wine and simmer for 10 minutes or so. Season with salt and pepper and remove from the heat to cool.
